IP and MAC address management in Jabber

Hey, I am wondering how IP addresses and MAC addresses are managed in a Jabber server. I see that for security reason, when user A talks to user B through a jabber server, IP address is not shown. Is it the same for the MAC address ? (I guess that if user B perform a netstat -n the IP address shown on XMPP port will be the jabber server one, right ?) When going into a voice chat, is it still using the same security rules ? Is voice also transitting through the Jabber server ? Or is there a local SIP server created ?
