I'm aware of some interesting deployments of Net-SNMP, but I don't
remember which of them I can talk about and which I can't and thus I
talk about none of them instead.  I will say that there are a number
that are in fairly mission critical situations.

If you're worried about protecting a small number of potential
operational controls, you might consider using SNMPv3 with it's access
control mechanisms to deny access to those particular controls except
for one SNMPv3 user...  Then use any other user for your normal
day-to-day operations which would help prevent accidental access to
the features you're worried about.

There are a number of commercial products out there that provide
support and a level of assurance far beyond what an open source
project can provide.  The most widely used commercial SNMP stack is
probably the one provided by SNMP Research.  They're pricey, but I've
always heard very good things about their products.
