I'm not seeing mention of "e-mail" anywhere in LDAP.pm. Everywhere that
the comments mention using the "e-mail" attribute, the code actually
uses the LDAP_Filter variable. This is with version 0.82.

Maybe I just missed a step in setting this up? I don't really know what
the proper steps are, since I haven't been able to find much
information. Is there something I need to be doing on the Windows server
besides just having the user accounts there? Is there more in
nocat.conf, in addition to the excerpt I posted, that I should be paying
attention to?
