iptables help needed

I recently ran nmap on my NoCat portal from the outside and learned 
there are many ports open that I don't want open. What I want is for 
everything unrequested from the outside (eth0) to be rejected, except 
for ssh from one IP.
iptables confuses me. A lot.
Seems like I need to add some lines to initialize.fw, but I have no idea 
what...
Help with this would be much appreciated.
