ldapmodify -Y external -H ldapi:/// <<EOF
dn: cn=config
changetype: modify
replace: olcLogLevel
# handles multiple values on one line, like "olcLogLevel: stats sync"
olcLogLevel: stats
EOF

Replace the ldapmodify command with however you connect to cn=config.
