I would guess(!) that "systemctl edit ..." respects the $EDITOR env var, 
and the manpage seems to confirm that.

(*These* two should actually do the same, but your "serverlocal" variant 
has me stumped ...)

My recommendation to get a root *shell* (prompt), if you do indeed need 
it, is "sudo -i". (I get the shivers whenever I see someone do "sudo su" 
instead.)

I think I've *once* seen a case where it was necessary to use "sudo -s" 
instead.
