Well-chosen IP pools for the OpenVPN instances, routes for those IPs (pointing to the tun interfaces of the respective instance, so give them *exact* names including the number in the OpenVPN configs) on the server, enable forwarding there as well, and finally, either MASQUERADE on the server or push a proper set of routes to the VPN clients.
