That's strange.  The expected hex output is not visible.  What you
showed is not what xxd does on my system.  Check that you are using
the one provided by the vim-common package?

% echo 'hello world' | xxd -g 1
0000000: 68 65 6c 6c 6f 20 77 6f 72 6c 64 0a              hello world.
%
