you could use an address for every
single day, eg yyyymmdd-user@domain.
then simply invalidate all addresses
which are older than N days. simple?

then again, for every addresses you use a
spammer might you another copy of his spam.

but if you are the maintainer of your
own mail server then you might as well
use those addresses for teergrubing,
ie whenever an invalid addresses is
being used for sending you can hold
the connection to the spammer site
indefinitely. "please hold the line"..

or use killfiles that *really* kill.  ;-)
"have you killed a spammer today?"  hehehe
