I'm pretty sure it's running vxWorks.

Some work on figuring out exactly what it's doing for audio is at
http://www.cocoadev.com/index.pl?AirTunes .  Nobody has so far figured
out either the encryption or how to tell it to accept an unencrypted
stream.
