It's private property that is open to the public during the day! We're not talking about sneaking in. The doors are unlocked, there are things going on, there's a wine tasting room, there's a starbucks selling coffee. We're not entering without permission, we're just entering to see if something works in there. It's RF spectrum, do they own that on their premises? Do they regulate what hardware a booth can use to show off their software? Do they regulate bluetooth devices? The fact that there is a vague "stick it to the man" element to this doesn't make it sabotage.
