I would think that the easiest off-the-shelf way to do it would be with a
SlingBox. It's got an RF input and the software will handle changing the
channels. On your side, plug in the SlingBox to a wireless access-point or
bridge and on the other side use a wireless bridge to connect back. Add a
directional antenna to each side to ensure that you get link at a decent
speed. The possible downside (from a usability standpoint) is that on her
side you would need a PC connected to the television to view the
programming. SlingBox+AP+Bridge+Antennas+Cheap(Surplus)PC=$500 or so - not
sure how that compares to duplicating your television aerials. A little
nicer might be to pickup a used laptop (slide it in with the VCR or
something) that has S-Video output (many do) and add a wireless
keyboard/mouse to control it from the coffee table.
