Sorry I'm late with this reply.  Just got back from a week's vacation.
Of the things on the LEG-UP CD, I think the most useful to the average
user-type person are:
 * InfoZip (a WinZip replacement.  There's a GUI front-end available too.)
 * OpenOffice (and possibly AbiWord)
 * The GIMP
 * Mozilla (or Phoenix, Firebird, et al)
 * Speak Freely (Internet telephone).
 * GhostScript and GhostView (for viewing PostScript files on the screen)

Others that may be of use, depending on your audience:
 * Lynx, Pine and PuTTY for text-based interfaces
 * GNU Privacy Guard (GPG)
 * TightVNC
