Hi are you going to be running these on Linux or Windows? All the programs you were mentioning are on several of the FLOSS for Win disks that are arround. For a show last week I made a bunch of the GNUwin disks (the audience was partly French, and GNUwin is in English French German Spanish and Italian) and that allows the use of all those programs without the disruption of having to re-learn the operating system. (http://gnuwin.epfl.ch/en/index.html) A Class on some of the tools in Mozilla, such as IRC could also be a good topic.
