208 3-phase is 3 120v circuits and a neutral. 208v is 2 legs of the circuit, like 240v is also 2 legs of 120v. It's 208 because it's not fully opposite phase like 120/240 single phase. If you want something nice looking, I'd get a dumb 120v rackmount power strip, take the 120v plug off it, put on a 208v 3-phase plug, leaving one of the hot not connected, then test it. If you are not electrically skilled, have an electrician do this for you.
