Personally, I use xmms (http://www.ubuntuguide.org/#xmms) for mp3 and
xine (http://www.ubuntuguide.org/#xine-ui) for playing vcd and mpegs. 

mplayer is another good choice. 

While I do not use Ubuntu (I use a slightly different distro, called
Debian) the basic principles are same; and I suggest that all you
really need to do is to read and folow the instructions in the section
on ``adding extra repositories'', and then say

``apt-get install xine-ui xmms''

add ``xmms-skins'' at the end of the above line, if you want the
skins. That single step will download, configure, and set up xine and
xmms for you.
