As Prakash said, just install a kernel with multi processor support.

That should be the kernel packages ending with -smp. Also, I am not
sure of Xeon processor.

If  it supports 64  bit architecture  (look for  EM64T support  in the
processor documentaion) , you can install amd64 architecture on it. In
this  case,  you  can  start  with installing  the  amd64  images  (no
installing i386 and upgrading is  NOT possible). Once the base install
is over,  you can install  xeon specific modules /  optimisations from
your favourite package manager.
