Open source and enterprise software are not mutually exclusive.  See
OpenJDK, Java EE, JBossAS/Wirefly, Apache Tomcat, etc

It depends.   For the most part developers and operators try to have their
development environments and production environments as similar as possible
to keep platform specific bugcounts down.  Nothing sucks worse than a
production app crashing because it was developed on a case insensitive
operating system (Windows) and deployed on a case sensitive one (Linux).
