Our system is similar, but not wifi.
Ours just just basic RH8 on the server, running in software RAID 1.
We us samba as the fileserver.
We bring the email down to our server from the ISP using fetchmail and 
access it with IMAP clients. Mozilla or Thunderbird are OK
We use postfix to send, but all email  to internal addresses just stays on 
the server.
PHProjekt is a possible solution for shared calendars, contacts etc.  So is 
Tent.  There are many others.
Time to change over some of those desktops :-).

There are many possible solutions, BUT (IMHO) there is no real open source 
equivalent to Outlook.  OTOH, you do not need that to have an effective in 
house system for such a small group.
