Is it worth the risk of incompatibilities, security holes (testing is slower than stable with security) and others for the extra features? What I've seen done before is use a debian stable base (with 2.4 kernel, ext 3 upgrades), but install testing packages for just the servers needeing updated versions. Things like spamassassin, clamav, zope/plone are typically pegged to testing with everything else left on stable. Works fairly well. Wierd errors can usually be traced to a small handful of errors and updates are limited.
