Fom what i have been reading cat 6 cables will help cut down on noise and static, and also from what i have seen it can fit the 5e RJ 45, but for better performance i would use something like Panduit Mini-com RJ-45 which is made for CAT 6e. The only real difference between cat 6 and 5 is the difference in the diameter in the cable from 23 guage to 24 guage. So to answer your question no performance issues, so if you have a cat 5 patch panel i would not change it, but if you are starting from scratch i would buy the cat 6e panels.
