Big ups to the UbuntuOne support team. I got the below message quite 
quickly. I tried a few things and checked them out with 'ls -i' and 
settled on sharing out a file ('progress.gnumeric') but actually editing 
a different file ('x.gnumeric') and then when I want to update the 
version I'm sharing I simply run a copy command at the terminal (cp 
x.gnumeric progress.gnumeric). That seems to work around the issue for 
now. Its a bit clumsy but it works.

Well, well, you got me investigating a bit :)
Turns out that file links in Ubuntu One are based on the node id rather than
the path.
So, apparently, whenever you use a program that saves a temp file with your
changes (so you don't lose them if the computer shuts down or something like
that), when you "save" the file what happens is that the program just renames
the file that was already saved. This way, it is actually a different file, and
the link for that should change.
I tried with a program that doesn't do that and indeed the file link doesn't
change; so maybe you could try either using another program to edit your
spreadsheet, or disable that behavior :/
