I'm baaaaaaack. I used testdisk to recover all of the partitions. It took a lot longer than it could have because I wasn't familiar with the tool and it took more than 10 hours to dd my 2TB drive, but I've got everything back with no data losses. I could have done it without the new disk and backup but hey! New disk!
