Recording audio

I have a nice set up for recording audio, a M-Audio USB Pre-amp and a
small selection of dynamic and condenser microphones. So far so good.
Then there is Audacity.
I have found that historically about a quarter and recently all my
recordings fail in some way (lately audacity just stops recording randomly).
Is there a simple recording utility some one could recommend? Audacity
is indispensable for processing recordings but too buggy to be relied on
when it is really needed to be 100% - during recording.
