Text colour too pale for ancient eyes

Old Ubuntu used to have colour adjustment for text and background,
separately, not bundled into allover "themes".  I have trouble reading pale
blue, which is the "other" text colour on e.g. http://www.odt.co.nz/and
http://www.stuff.co.nz/.
I've looked at browser settings too, can't find a way to change this.  I'd
like all the text to be black on off-white (the current background is
perfect) or any very dark colour.

Any suggestions, other than saving time by not checking those sites for
what's burning and who's been a prat/victim?
