How to customize menues in Gnome?

I hit upon the problem, that I can not change the menus in Gnome.
In KDE that I used before there is an easy way to add/remove items from the
main menu which comes at the "Start" button in the lower left corner.
But how under FC6 the Gnome seems better, but I could not find how to
customize the menu?
In particular, I want to get rid of that nasty System->Suspend menu item
that stalls my system any time I hit it by mistake, and there is no way to
recover but to reboot.
Any suggestions?
