I do,

postfix(maildir). dovecot, spamassassin, squirrel mail(yeah, I know, it
works).

I have used sendmail, cryus as well, bove is much easier to configure and
maintain, IMO.

I prefer IMAP, works well with my phone and most clients.  POP can get out
of sync.

I do not use gmail, unless my homebrew is not working.
