/usr/bin/vimtutor both emacs and vim have built in tutorials that are pretty decent. It takes a while to get comfortable in either....I'd start by getting the basic navigation, open file, edit file, and search and replace....the rest just turns into handy little Easter eggs you keep discovering over time.
