Fairly simple with ffmpeg assuming the device is recognized as 
/dev/video0 or some such.

I'd rotate files hourly. Makes it easier to search and keeps files from 
growing too large. Also you can have a/v sync issues the longer you run 
with consumer gear a fair amount of the time.
