What does your /etc/fstab and/or mount results look like when Ubuntu is running? If Ubuntu is not using the LVM space (you won't know from gparted) and you're certain nothing else is, then nuke it. But be really super certain. I've had minimal experience w/ gparted, but it worked as advertised and after reading some docs, I was able to drive it with confidence. Perhaps more experienced users can help with the details.
