Slightly OT: converting VHS tapes to DVD under Linux

I'm looking to convert some VHS tapes to DVD and would appreciate any
input from list members who have ventured down this path.

Haven't settled on what I should use - the docos are a bit thin on this
topic - but I have an 80GB SATA drive installed and ready to go.

Any and all contributions gratefully received. Whatever method I use
