Tim, I've posted before about modding an xbox. My suggestion is to use a mod chip which is a little safer in my opinion, but safe mods are excellent also. Mod chips are my favorite. The process is not that hard and rather quick (about 1 evening). Start with xbox-scene.org for information about modding and what options are available. Read the tutorials and getting started type material. All the things that you mentioned you can do and most rather easily. I consumed a whole 300 GB HD with all my movies and files. I also stream files off my computer via wifi. Follow this link http://www.xbox-hq.com/html/postt22060.html to download Auto Installer Deluxe (AID) which contains almost all the programs you would want with a modded xbox. It also has a pdf manual/guide on softmodding which you mentioned.
