Found it, the world's best kept audio conversion secret:

You have to install a couple hand-fulls of libs, but converting a directory
of MP3s to M4As was as easy as:

pacpl --to m4a ~/mp3/audio_adrenaline/Underdog/

Viola!

I was stuck on "mp4," but when I broadened the search a little, I found an
obscure reference to the PACPL site.

This should make life in this house better. ... it's always the little
things.
