I've had quite a few problems with reliable mail delivery on Google Apps infrastructure, and think we would be trading one set of problems for another. Right now the lists and website run well enough for the SLUG community, at the expense of people who maintain the infrastructure. Switching to Google Apps will make it easier to maintain SLUG infrastructure, but create a horrible user experience for the SLUG community. I know which one I'd optimise for. I don't think SLUG's current infrastructure puts a gigantic strain on those who maintain it. There is a lot of technical debt that needs to be repaid, but once that's done the maintenance headaches will be significantly reduced. If you're dead set on outsourcing the mailing list, maybe check out Librelist.com[0]?
