Here's some Fedora specific information (Would probably apply to RHEL,
Centos and Scientific Linux too, but I haven't really checked myself).

This page details how to build a custom kernel[1] using the Fedora
source rpms. Rawhide generally follows the latest upstream kernel
version and you can get source rpms from the koji build system[2]
(rawhide is currently F21)[3].

The Fedora kernel package maintainers also provide rawhide kernels with
debugging turned off[4].

It'll be quite similar to building a custom kernel over the command
line, the difference being that it'll be done via rpm. You can do it
outside rpm too, once you have the source tar and patches extracted from
the source rpm.=20

You can use mock to build stuff too[5].
