What hosting service?

This question seems to come out about once per quarter, and every quarter
the answers vary. So, my turn to ask the question this quarter.

I am looking for a place to host a J2EE app, with a Tomcat server (probably
on Apache). We are using Sails as our web application framework, Hibernate
and MySql for the DB.

This isn't going to be high volume, but we need it to be extremely reliable
and snappy at an affordable price (it's a service for a small niche that
probably will be generating no more than a few thousand dollars per month,
so don't want to pay $1,000/month for hosting). We're confident in our code
base (test-driven), now we need a host that has reliable service in keeping
the lines open to the rest of the world.

So, what's the latest opinions/experiences out there?

Thanks in advance,

Ken
