Because that is what the rules are for the Fink mailing lists. If you 
need to send a larger log file, either trim out the irrelevant parts or 
upload the file to a web accessible location and include the link in 
your post.

The above is correct. You should now be cloning from 
https://github.com/fink/fink

Yet the bootstrap log you attached says you're cloning from 
https://github.com/TheSin-/fink which is now out of date with the master 
branch on the primary repository since the dpkg1.16 branch was merged.

Why are you removing this chunk? It specifically contains code that 
deals with instances where the darwin and macOS versions don't follow 
the usual pattern. Furthermore, the code you pasted above is outdated 
and doesn't know how to deal with macOS 11.7, which is what you're running.

Make sure you're on an up to date clone of https://github.com/fink/fink 
, don't delete any parts of files, and try bootstrapping again.

I would not be surprised if your deletion is messing up the setting for 
MACOSX_DEPLOYMENT_TARGET and thus breaking compilation.
