We just released fink-0.45.4 to deal with this issue: an upgrade to 
XQuartz earlier this year broke how we detect its presence.

If you run `fink selfupdate`, you'll get fink-0.45.4, which should then 
show a system-xfree86 at version=3:2.8.1

This release doesn't yet support macOS 11 or 12, but we have just one 
remaining bug to deal with there.
