OMG! Thank you so much everyone for raising this bug report and fixing it.

I was familiar with java.net.preferIPv4 and net.inet6.ip6.v6only but was
tearing my virtual (because I don't have any left) hair out over getting a
Minecraft server with Java 21 to listen on both IPv4 and IPv6.

Works perfectly now, thanks again.
