After applying the following two patches: http://people.freebsd.org/~markus/ibm/acpi_ibm.c.diff http://people.freebsd.org/~markus/ibm/acpi_ibm.c.diff-2 you can set dev.acpi_ibm.0.fan to 0 which enables manual speed setting.
