Not really; I think head displayed all the null bytes, they simply do not
show in a pseudo-terminal. Try this:

  dd if=/dev/zero bs=512 count=1 > zeroes.bin
  cat zeroes.bin
  head zeroes.bin

If you pipe the output of head to e.g. od or hexdump or something, you will
probably see all the null bytes.
