After some poking, I upgraded to 15.0-RELEASE again, and it now behaves like
14.3, only 640x480.

I then tried Debian 12, and got the same results.

Found this in dmesg following a hint from a forum:

[drm:detect_link_and_local_sink [amdgpu]] *ERROR* No EDID read.

I'll look around for some different cables, though I think the one I'm using
with the TV is good quality.

Also seems it might be possible to override the EDID via xorg.conf, but that'll
require some research.
