Jim Meyering has done the cvs->git work for various things on sourceware. (As I recommended for Hurd some months ago, this can be done in a noncommittal way before switching from cvs for commits to existing branches.) He can give you pointers. But AFAIK git-cvsimport alone is easy enough to get right.
