Yes, it's probably a bit overkill.  The interface is not important,
but for example, most laptop's don't bring a parallel or a serial port
and usb is the only solution.  I think that the best solution is build
a specific device using, for example, Cypress EZseries of USB
controllers and go from there.

It's very overkill indeed, for low sampling rates.
