You have choices, for each of which there are man pages:
   ed
   pico
   vi(m)
   emacs
to name a few, listed in order of their (increasing) complexity.  There 
are probably others, and you should know that discussions of whichis 
"best" are akin to the kind of religious conflict we see every day in 
the news, world-wide :-}

For future reference, you can try the commond "apropos", which will 
tell you what man pages match the argument given.  The man pages 
typically deal with command-line apps, libraries, and file formats.  
For example, try "apropos editor".
