ZFS, and LU, and bears - oh my.

I have recently started two moderately disparate projects, and I am confused
as to the relationship between the two.  ZFS instead of UFS and using
LiveUpgrade to patch.

This is my first native ZFS Solaris server.  At first, I created /opt and
/home as zfs filesystems so they could be mounted anywhere.  But when I went
to use LiveUpgrade to patch the system, I had to remove the /opt/ and /home
zfs filesystems so that the pool had no additional filesystems -- just the
zpool and that was it.  At  this point I could create a new lu environment,
apply patches to it, promote it, reboot, and everything worked.  But the zfs
documentation I am reading talks about the benefits of creating many many zfs
partitions (instead of mkdir).  So how do I create dozens of zfs partitions
within my zpool and still use LiveUpgrade to patch my system?
