Sturmey Archer makes a three speed fixed gear hub that has always fascinated me. I haven't used one, but I hear-told it has a bit of play in the gear, like having a loose chain on normal fixed gear, and this can be very irritating to most riders. The Sturmey Archer SX3. For my racing and commuter bikes, this could theoretically work even on hills since I'm still pedaling at 30mph. Ultimately a type of clutch might be ideal so that I could choose whether or not to be freewheeling, but I'm not sure that currently exists.
