I find sometimes after a mishap that I am very sensitive to anything.
Although this may not be the case, I think you may be oversensitive to
anything on the bike now thinking you "broke it". Unless you see a leak, you
didn't break the shock, nothing in there except a spacer, springs and oil.
If oil leaked than that, my friend, is the problem, otherwise there should
be no difference in the shocks from before the mishap and now.
Shocks are notoriously a weak aspect on the first SV series. With your
weight use 15w oil and look in the "tips n tricks" section for the proper
length PVC to add to the preload.
BTW- the oil will move the shock slower and the preload will make the shock
move less or in other words stiffer. Be sure you don't add more oil than is
required and same goes for the preload. Too much and you'll have a very
stiff shock.

lastly, be sure you crank up the rear shock to the top or one from the top
setting when you stiffen the front.

Been a while since I worked on a 2000 SV but I'll help however I can, if you
need some guidance.

I weigh 300 lbs. The forks were fine when I got it. after the wreck they got
skwooshy. I when't over the handle bars.
