For easier loading, I'd consider installing a (portable?) winch in the bed
with a long lead.  With practice, you can attach the bike to the winch, hop
on, and winch yourself and bike up into the truck bed (backwards with a good
ramp).

As for the van, I drove a full-size van at work for a while.  I'd never
driven one before, and it was easy to get used to and easy to drive.  Never
had any driveability problems with it.  I'd say it was as easy to drive as a
pickup truck, but with a better ride.
