You basically write your own latex.mapping.xml file that contains all the mappings you wish to override. Then, set the $latex.mapping.xml variable within your own .xsl file. There is an example of it here: <http://cvs.sourceforge.net/viewcvs.py/db2latex/db2latex/xsl/sample/test_mapping/>.
